How do I avoid sauce that tends to « separate »?
If sauce tends to « separate », you can add a bit of cornstarch that has been diluted in a small quantity of cold water. mix well, add to sauce and bring sauce back to a boil. you can also try adding a small quantity of berthelet brand consistaide, mix well and the sauce will regain its desired consistency. sauce separation is caused by one of two factors. either the starch in the sauce was not brought up to required temperature (boiling point, then simmer for 5 minutes) or it has been contaminated (too long in steam-table, cross contamination from utensils or bad water quality at specific periods of the year).

How should I store berthelet products to insure maximum shelf life?
- Most berthelet dehydrated products have an 18 month shelf life when stored in a dry & cool environment. as most food products, heat and humidity will shorten shelf life of products.
- Most berthelet liquid products have a 6 month shelf life before container is opened. once container is opened and exposed to air, products must be refrigerated. they will keep for between 2 and 4 days once refrigerated.
