French Onion Soup Au Gratin

onion, sliced

15 ml

butter

100 ml

white wine

bay leaf

slices of white bread croutons

125 ml

gruyère cheese, shredded

Berthelet 5 Forks Malabar Black Pepper, ground, to taste

Directions

Step 1
In a saucepan, sauté the onions in butter until lightly golden

Step 2
Deglaze with the white wine and reduce by 2/3

Step 3
Add water and the soup base to the onions, add the bay leaf

Step 4
Bring to a boil and let simmer for 20 to 25 min, add pepper

Step 5
Divide the soup into 2 oven-safe dishes, add the croutons on top and cover with cheese

Step 6
Cook in the oven, on broil, until the cheese is browned
