Maple and Sichuan Peking Duck

duck breasts, about 300 g each

45 ml

maple syrup

30 ml

apple cider vinegar

2.5 ml

Berthelet 5 Forks Szechuan pepper whole


pinch of salt


Step 1
Divide the fat on top of the duck breasts into squares and sprinkle with salt

Step 2
In a very hot pan, brown the duck breasts, fat side first

Step 3
Remove the cooking fats and set aside the breasts

Step 4
Pour the maple syrup into the pan and reduce by half, deglazed with the vinegar and reduce by half again. Add the Sichuan pepper

Step 5
Baste the breasts with the glaze

Step 6
Cook the breasts in the oven at 350 degrees F about 10 to 12 minutes (slightly pink center)


Tip: serve with mashed potatoes and a green vegetable
