Step 2 Bake the potatoes in the oven as indicated by the manufacturer. Step 3 Divide potatoes in 4 bowls, top with bacon (cut into small pieces) and cheese curds. Place poached egg on top of each serving and pour some hot hollandaise sauce. Step 4 Sprinkle chopped chives and a pinch of piri piri on top.
