Vegetarian burger with courgette and quinoa

of quinoa, cooked and drained

125 ml

of courgette, grated and patted dry

125 ml

of carrot, grated and patted dry

125 ml

of leek (white part only), chopped

clove of garlic, chopped

65 ml

of breadcrumbs

5 ml

of Berthelet Chimichurri mix

2.5 ml

of salt

28 g

of Berthelet Professional 100% plant based EZ-Protein powder

egg

15 ml

of olive oil

Black pepper to taste

Directions

Step 1
Grate the courgette and carrot and remove excess moisture.

Step 2
Combine with the other ingredients, apart from the oil.

Step 3
Shape 4 patties (about 100 g each). Season the patties with black pepper. In a pan, fry in oil for 4 to 5 minutes on each side over medium-high heat until browned.

Step 4
Serve with your favourite burger buns and sauces.
