The spiky fruit of a flowering vine, our Malaysian long pepper is harvested unripe then dried. Unlike the more traditional black, green and white peppers, its distinctive shape is not suited to standard pepper mills. Instead, it should be crushed in a mortar, grated or left whole in preparations. Its taste, fruitier and less spicy, is tempered by the notes of cinnamon, and even liquorice, typical of Indonesian cuisine. It will bewitch your soups, braises, game and lamb dishes.
